In May, we headed to San Pedro, Belize for five days of warm water diving, island adventures, and plenty of memorable moments above and below the surface.
This trip was especially exciting because it marked the inaugural trip led by our newest Trip Ambassador, Ross. Many travelers already knew him as a chef, innkeeper, author, scuba enthusiast, and longtime MAR Hosted Trips traveler. By the end of the week, everyone agreed that “Ross the Boss” will be a beloved new member of the team.
From custom-made dive snacks to local food recommendations and thoughtful celebrations, Ross brought his own personality to the trip and helped create an experience that felt uniquely Belizean.

Diving Belize
The group spent three days diving off the coast of Ambergris Caye, with two boat dives scheduled each day.
Belize is known for warm water, healthy reefs, and easy diving conditions, making it a fantastic destination for divers looking to relax and enjoy the underwater world.
Throughout the trip, divers encountered:
- Nurse sharks
- Caribbean reef sharks
- Sea turtles
- Eagle rays
- Southern stingrays
- Octopus
- Countless reef fish
Conditions underwater were generally calm and easy to navigate. The biggest challenge actually came at the surface, where strong winds created 6-8 foot swells on some days.
Fortunately, the dive crew stepped up in a big way. The team worked tirelessly to assist divers getting in and out of the boats, helping everyone feel safe and supported despite the rougher conditions.
Unfortunately, weather eventually forced the cancellation of the final day of diving. But as often happens on MAR Hosted Trips adventures, the group quickly pivoted and turned the day into another memorable experience.

Celebrating Milestones
One of the highlights of the week was celebrating Jane’s incredible milestone: 45 years of diving.
The group marked the occasion with gift bags, a custom ocean-themed cake decorated by Ross himself, and a special dinner overlooking the water.
It was a wonderful reminder that diving is a lifelong adventure, and that some of the best moments happen when we celebrate together.

Exploring San Pedro
When not diving, the group spent time exploring San Pedro, the vibrant island town that serves as the heart of Ambergris Caye.
One thing visitors notice immediately is that golf carts rule the roads. With very few cars on the island, many travelers rented carts and spent their free time exploring beaches, shops, restaurants, and hidden corners of town.
Several members of the group joined a walking food tour through San Pedro, sampling eleven different local dishes and drinks across six different stops.
Along the way they enjoyed:
- Shrimp ceviche
- Fresh snapper
- Salbutes
- Fry jacks
- Pibil tacos on Mayan tortillas
- Rum punches
- Belizean beer
- Key lime pie
The tour also offered a fascinating look at the history of San Pedro and the people who helped transform it into one of Belize’s most popular destinations.
Another evening, Ross introduced the group to one of his favorite local restaurants, where many travelers tried pupusas for the first time. These thick grilled corn cakes filled with cheese, meat, or beans quickly became a crowd favorite.

Making the Most of Every Day
Not everyone spent every day underwater.
Some travelers chose to take a short flight inland for a day of cave tubing and zip lining through Belize’s lush jungle.
Others visited nearby Caye Caulker, known for its laid-back atmosphere, local shopping, and waterfront dining.
When weather cancelled the final day of diving, the group headed out to explore some of Belize’s most famous marine attractions above the surface instead.
A snorkel trip to Hol Chan Marine Reserve and Shark Ray Alley provided incredible encounters with marine life before the group continued on to Secret Beach.
Lunch was enjoyed at picnic tables set directly in the water, where fresh seafood, tacos, and coconut shrimp were served with a side of Caribbean sunshine.
The day ended at Truck Stop, a unique outdoor venue featuring food trucks, live music, games, and a relaxed island vibe.
Ross’s Belizean Snack Bar
Every trip leader brings something different to the table.
Ross literally brought snacks.
Throughout the week, divers returned from dives to find homemade treats waiting for them. His cabana quickly transformed into a miniature Belizean bakery.
Favorites included:
- Sea salt Nutella oat bites
- Coconut ginger lime balls
- Pasilla chile peanut butter no-bake cookies
The recipes were shared with the group, ensuring everyone could take a little piece of Belize home with them.

A Different Kind of Dive Story
One of our travelers, was unfortunately unable to dive due to an ear issue that developed before the trip.
Rather than letting that stop her from enjoying Belize, she made the most of her time exploring the island.
One day she visited a local animal shelter and returned with a four-legged friend who quickly became the unofficial mascot of the group.
The puppy received plenty of attention, affection, and photo opportunities throughout the day. Rumor has it this lucky pup may have found a forever home as a result.
Why We Love Belize
Belize offers something for everyone.
The diving is easy and enjoyable. The marine life is abundant. The food is excellent. And there is no shortage of adventures when you’re ready to take a day off from diving.
Most importantly, it is a destination that rewards flexibility. Even when weather changes plans, there is always something worth exploring.
This trip gave us sharks, rays, turtles, great food, new friendships, a diving anniversary, homemade cookies, golf cart adventures, and one very spoiled puppy.
Not bad for five days in paradise.

We visit Belize every year! Sometimes to San Pedro, but we have also done trips to other parts of the country like Palencia.
In 2027, we are going to a resort on Turneffe Atoll for a whole week!
